I have made various blueberry, apple, pineapple and passion fruit jams, and it’s time for the beautiful chef to come up with something new~ Figs are a super healthy fruit, but the fruit period is very short and difficult to store. If you buy a bunch of them, you will eat half of them and half of them will rot... So, taking advantage of the recent abundant production, make some jams and save them. Eat them when you want and taste them slowly

  1. Wash fresh figs, peel and stem them, drain and set aside

  2. Figs contain a lot of sugar. The amount of rock sugar can be adjusted to your personal preference. Squeeze the juice from the lemon and cut the figs into pieces

  3. Add rock sugar and lemon juice to the crushed fig pulp, stir evenly and let it sit for 2 hours until the pectin separates out

  4. Put the pulp and juice into the pot and heat it. Be sure to stir constantly to prevent it from sticking to the bottom and skim off the foam on the surface while heating. After about 20 minutes, the jam begins to thicken. At this time, you can add your favorite spices, such as cinnamon or vanilla. Continue to heat for about 10 minutes until the jam is ready.

  5. Pour the jam into a glass bottle sterilized with boiling water, let it cool naturally and then store it in the refrigerator.
