Four-leaf clover matcha mousse - freshness in spring, green beauty and good mood
Overview
In the freshness of spring, the first thing that comes to mind when seeing green is matcha-flavored cake. The fresh and not greasy taste will put people in a good mood. Matcha and cocoa are a perfect match. One has a bit of bitterness in the fragrance, and the other has a bit of bitterness in the mellowness. They are intertwined and have such a long aftertaste. Each leaf of the four-leaf clover has a different meaning and contains four things that we dream of in life: fame, wealth, love and health. Therefore, "four-leaf clover" is recognized as a symbol of happiness. I have always liked four-leaf clover and its flower language~~~

Ingredients
Steps
-
In ingredient A, mix milk and salad oil and pour into a mixing bowl
-
After mixing evenly, sift in cocoa powder and low-gluten flour and stir into batter
-
Add the egg yolks in portions. When the egg yolks and batter are evenly mixed, add the next portion
-
Until all the egg yolks are added, make an egg yolk paste
-
Add 40g of fine sugar to the egg whites in three batches and beat with an electric egg beater until 70%
-
Take a small amount of egg white and add it to the egg yolk paste, stir evenly
-
Then pour it back into the egg whites and mix into cocoa cake batter
-
Pour into a baking tray lined with oiled paper, shake it a few times to smooth the surface, and put it into a preheated 180° oven, middle layer, heat up and down for 25 minutes
-
Turn the baked cake onto the drying net and carefully tear off the parchment paper to dissipate heat
-
After baking the cake slices, use a mold to carve out four heart-shaped cake slices, and place the carved cake slices
-
Use scissors to cut a small circle along the edge and place it into the mold. Wrap the entire mold in tin foil and set aside
-
In ingredient B, take 40g whipping cream and 40g milk, bring to a boil over low heat, then remove from heat
-
Sift in the cocoa powder, stir evenly, and pour in the chocolate
-
Melt butter that has been softened at room temperature over water, and mix evenly with the previous liquid
-
Use an electric mixer to beat the remaining whipped cream until it is 60% creamy
-
Soak the isinglass powder completely in the remaining milk
-
Take a small amount of whipped cream and soaked isinglass powder, pour them into the previous chocolate paste, and stir evenly
-
Pour it back into the whipped cream and stir into chocolate mousse
-
Pour the mixed mousse paste into the previously prepared mold, smooth the surface, and put it in the refrigerator for 2 hours. After taking it out, unmold, sift a layer of matcha powder on the surface, decorate it slightly, and the refreshing four-leaf clover matcha mousse is made
