Sweet potatoes are slightly larger, about 300 grams each. Clean the sweet potatoes and cut them in half.

Wet a kitchen towel, wrap the sweet potatoes and put them in the microwave on high heat for 8 minutes. Wrapping in wet paper towels is to maximize the moisture in the sweet potatoes from evaporating.

Use a spoon to scoop out the flesh of the roasted sweet potato and keep the skin intact.

Add 30 grams of whipping cream, 20 grams of caster sugar, and 15 grams of butter to the sweet potato puree and stir until blended into the sweet potato puree. If you don’t have whipping cream, you can add milk.

Add the blended sweet potato puree back to the sweet potatoes.

Spread cheese on the surface and bake in the oven at 180 degrees for 20 minutes. The oven temperature is for reference only as each oven has slightly different temperatures. I used mozzarella cheese from regular baked pizzas, but you can also use flaky cheese from the supermarket.
