Pineapple curry rice
Overview
It takes 10 minutes to dig out the pulp and 10 minutes to grill the cheese. It only takes an extra 20 minutes to make simple home-cooked fried rice, guaranteed to make your Ta’s eyes light up! Fried rice with fresh pineapple juice and using the pineapple shell as a container is much more fragrant than simply fried rice with diced pineapple. What you get is the fresh and sour sweetness of pineapple, which is by no means comparable to the taste of sugar and ketchup.

Prepare materials. Dice the carrots and onions, and pre-cook the carrots and green beans. It is recommended to marinate the prawns with minced garlic and coriander for half an hour

Cut pineapple in half. Cut out a rectangular shape 1 cm from the edge with a knife, and then insert a knife at the bottom, as shown in the picture.

Cut small pieces into a rectangular shape, insert a fork into it, and pull it out with force

Pull out the big pieces of pineapple flesh, and then slowly scrape off the remaining flesh

Use the hollowed-out pineapple as a container and set aside.

Add oil, stir-fry two eggs until cooked for 8 minutes, then scoop up.

Stir-fry the shrimp and squid until 8 minutes done, then scoop them up

Onions, carrots and green beans are fried to dryness

When the onions become translucent, add overnight rice. This is for 4 people

When the overnight rice is fried, it will have clear grains and be relatively dry at first. Pour in a little pineapple juice. It will be slightly sour and sweet, and it will have a lot of flavor

Stir dry the water in the pot again and add cooking wine

If you use half a spoonful of curry powder, the amount is two bowls of rice plus half a spoonful. Stir well

Put the fried curry rice into the pineapple container and sprinkle with grated cheese

Place the pineapple covered with grated cheese in the oven at 180 for 10 minutes, until the cheese is completely melted and slightly caramelized
