Homemade fish balls
Overview
I bought a big-head fish today, stewed the fish head and fish bones in soup, and made a big bowl of fish balls under the fish fillet, which I put in the refrigerator for easy use. Boil a few noodles when you wake up in the morning, or make soup when eating, or add them to the hot pot with other hot pot meatballs. They are all good ingredients for freshness

Lay the fish skin down on the chopping board and use a small spoon to scrape off the fish bit by bit

Chop it into such delicate fish paste

Put the fish paste into a bowl, add water little by little and stir first. Remove the yolks from the eggs and beat with a whisk until foamy.

Pour the egg whites into the bowl of fish paste, add all the seasonings, and stir vigorously in one direction with chopsticks until the fish meat becomes sticky.

Squeeze the fish balls into the pot in the same way as the chicken balls.

Cook until it floats

Turn it up and put it in a basin to cool

Finally, cut a piece of green onion into the center of the fish balls for decoration
