Peach Gum Bird's Nest

Overview

First, clean the peach gum to ensure that the surface is clean, and then soak it in water for about 12 hours
After soaking, until there are no lumps to the touch, wash thoroughly
After washing, add water to cover the peach gum, bring to a boil over high heat, then reduce to low heat, simmer for about 20 minutes until the gum comes out, then add an appropriate amount of rock sugar (I suggest you wait until the stew is done to add honey)
When the peach gum is almost simmered, add the previously made bird's nest (see my previous recipe for how to make bird's nest). Once it's cool, it can be used. Do not store it for too long
