Brush the bottom of the mold evenly with butter and set aside;

Making caramel apples: Peel the apples, cut into slices and set aside;

Cook fine granulated sugar over low heat until caramel color, slowly add water in batches and mix well;

Add butter again;

Add the apple slices and rum and sauté over medium-high heat until the apples soften and turn into caramelized apples;

Spread the caramel apples and sauce evenly on the bottom of the mold and set aside;

Cake preparation: Cook butter over low heat until melted, turn off heat;

Add low-gluten flour and mix well with a whisk

Add milk, vanilla extract and egg yolk respectively, and mix with a whisk to form a batter;

Add sugar to the egg whites in three batches and beat until wet and dry. The top of the beaten egg whites is slightly curved;

Add 1/3 of the egg whites to the batter and mix gently, then pour the batter into the remaining egg whites and mix evenly;

Pour the mixed batter into the mold and smooth the surface. Preheat the oven to 150 degrees, with upper and lower heat on the middle layer, and bake for about 30 minutes. After taking it out of the oven, turn it upside down and unmold after it cools down slightly.
