Vegetable Squid Rings
Overview
I don’t often eat squid at home because my cholesterol is too high, but I highly recommend this Western dish because the addition of mashed potatoes, carrots, and celery adds a lot of nutrition to this dish.

Wash the carrots and cut into pieces.

Wash and chop celery.

Cut the potatoes into chunks and steam them in a steamer.

Put potatoes, carrots, celery, salt, and black pepper into a bowl and grind into puree.

The squid rings are coated with a layer of starch.

Place mashed potatoes into squid rings and pat flat.

Add into the beaten egg mixture.

Pour a little olive oil into the pan and fry the squid rings until golden brown on both sides.
