Overview

The annual Spring Festival is coming soon. Whenever I go home during the Spring Festival, Dou Dad misses the taste of shredded beans the most. Adding some bacon to stir-fry makes it more delicious. Nowadays, shredded beans are available in the market again. The freshly made shredded beans can be wrapped with some pickles and dipped in sugar. You can eat them directly or stir-fry them with some side dishes for another flavor. Now that I am in a different place and can’t find fresh shredded beans, you can use dried shredded beans instead. Although the taste is not as good as the fresh ones, it is still delicious

  1. Soak dried shredded beans in cold water for about 30 minutes. Drain the soaked shredded beans and set aside

  2. After washing the green garlic, cut it into sections of about 5cm (separate the white garlic and garlic leaves), and slice the bacon (separate the fat and thin)

  3. Add a little oil to the pot, then put the fat into the pot and stir-fry slowly over low heat

  4. When the meat is fried until golden brown on both sides, add the white garlic segments into the pot and stir-fry

  5. When the garlic is fragrant, add the drained shredded beans and stir-fry quickly

  6. Stir-fry for about 1 minute. When the shredded beans slowly soften, add garlic leaves, lean meat, about 3 grams of salt, half a spoon of dark soy sauce and half a spoon of vinegar. Continue stir-frying quickly. After the salt, dark soy sauce, vinegar and shredded beans are evenly stirred, turn off the heat and remove from the pot.
