Prepare the loquat and wash it properly.

Wearing gloves, start peeling and removing the core. (ps: Wear gloves to prevent loquat liquid from getting on your hands, which are difficult to clean. Disposable PVC latex gloves are cheap and easy to use.)

Prepare a basin with some water and hold the peeled loquats. (ps: It prevents oxidation and can clean the residue left by peeling loquat)

Prepare rock sugar, you can break it into small pieces (to melt faster)

Turn on high heat. After the pot is hot, put all the loquat rock sugar into the pot. Stir-fry until the rock sugar has melted and bubbled, then lower the heat to low. (ps: stir-fry occasionally to avoid burning)

After frying for 30 minutes, it will almost be this color. It feels sticky. Then get ready to call it a day!
