Choose potatoes that are slightly longer and thinner, cut them into strips, and wash off the starch on the surface

Boil water and add a little salt

Cook the potato strips until cooked through, about 2 minutes. Drain into cold water, drain, and freeze in refrigerator until hard.

Heat the oil to about 160 degrees. It bubbles up when you dig it in with chopsticks. Don't use too high a temperature or it will become mushy. Add potato strips, fry over high heat until golden brown, remove and control oil. If you want it crispier, fry it again. It depends on personal preference.

Add butter and melt

Pour in the fries, weigh the pan back and forth a few times, and sprinkle with a little salt. Coat the fries evenly with butter and salt. Take out of the pot
