Blueberry Jam Tart
Overview
My husband was going fishing with a client, so I prepared coffee cakes and egg tarts. The cakes were baked on Saturday afternoon, and the egg tarts were baked fresh in the morning. I also packed them with oranges and bananas, so I could go fishing without eating at noon. My husband came back and said that his client’s son also went. A ten-year-old boy ate two pieces of cake and three pieces of egg tarts. He kept saying it was delicious, which sounded like a real sense of accomplishment. It would be even more perfect if I made my own egg tart shells, but now time does not allow, so I basically buy them. Let’s try again after the long holiday!
