Wash the chives, cut into sections, and set aside;

Wash and peel potatoes;

Cut the potatoes into 1cm square cubes and put them into water to wash away the starch on the surface;

Pour the diced potatoes into the pot and cook for 5 minutes;

Cooked diced potatoes, drained;

Heat the oil pan 50%;

Pour the diced potatoes into the pot and stir-fry (fry gently and leave the potatoes to break)

Fry until the surface is golden brown, add scallions, salt and pepper;
