Xiangxi Tujia Crispy Pork
Overview
Crispy pork is a traditional delicacy of the Tujia people in Xiangxi, Hunan. In the past, it could only be eaten during the Chinese New Year. I had a special liking for it when I was a child. Whenever my mother fried crispy pork before the New Year, I would stay by the pot. When the golden crispy pork was taken out of the pot, I couldn't wait for it to cool down, so I grabbed one and ate it. It was crispy on the outside and crispy on the inside, plus the salty lean meat and pepper aroma. I ate it until my belly was round. Endless aftertaste. Now that the conditions are good, you can fry it whenever you want to eat it. The freshly fried crispy meat is delicious. If you can't finish it, you can freeze it in the refrigerator. You can also break it in the middle and cook it in soup or hot pot for a special flavor. The one I made has very few condiments because I think the original flavor is the most delicious.

I bought the pork and cut it into strips. I added some fat. If you don't like it, you can use all lean meat. Personally, I think a little fatter meat tastes better.

After cutting, add salt, pepper powder, cooking wine, and light soy sauce, mix well and marinate for five minutes. The spoon I use refers to a small spoon, about 2-3 grams of salt per spoonful. Spoon means teaspoon.

Add a small spoonful of sugar for coloring when frying. In the past, sweet fermented rice was added. Today, if we don’t have it at home and don’t want to buy it, we can use white sugar instead. The effect is the same. The paste should not be too thin, nor should it be too dry, so that the paste can hang up when picking up the meat with chopsticks. Since salt is used when curing the meat, there is no need to add any more salt. You can try the batter and add more salt according to your personal taste if you feel it is too salty.

Heat oil in a pan.
