Wash the spinach and cut into segments.

Put it into a pot of boiling water and blanch it, then rinse it with cold water.

Chop green onions and set aside.

Beat the eggs in a bowl and add a little cooking wine.

Add oil to the pot, add eggs and fry until cooked, set aside.

Pour a little oil into the pot, add chopped green onions and peppercorns and stir-fry.

Pour in the spinach, add a little light soy sauce, salt, then pour in the scrambled eggs and stir-fry.
