When buying spareribs, soak them in cold water three times to remove the blood

Add salt, cooking wine, peppercorns, ginger and green onions and marinate for about 30 minutes. The longer the marinating time, the better, no more than two hours

Put in the pot and cook until the meat is cooked

Boil the dried chili peppers and Sichuan peppercorns in water over low heat until the chili peppers are completely soft, then drain the water and chop into finely chopped chili cakes

Pour oil into the pan and lightly fry the ribs

Leave the oil in the pot, add watercress, glutinous rice cake chili, five-spice powder, ginger and green onion and stir-fry until fragrant
