Five-spice puff pastry strips
Overview
Yesterday when I went to the vegetable market to buy food, I saw two older ladies making these Thousand-Floor Strips. The golden-yellow Thousand-Floor Strips are fragrant and come in five, spicy and original flavors. I stood there looking at them for a long time, and the elder sister asked, "Hey, sister, how much do you want after looking at them for a long time?" I said; I just want to look at it but not buy it, okay? She said; If you don’t buy it, don’t take up space here! I said; I still don’t understand how to do it? She said, "You can make dough as long as you change it from big cakes to small strips. But girl, just learn not to sell it next to me, otherwise I will destroy your stall."

Pour 5g yeast into the bread machine bucket, add 140g warm water and let it sit for 5 minutes. Add 250g plain flour, 3g baking powder and 3g white sugar;

Turn on the bread machine and knead the dough in sequence, knead the dough evenly, cover with a moisturizing film and ferment for 15 minutes;

Turn on the bread machine again and knead the dough until it is smooth and non-sticky, take it out and let it rest for later use;

Mix 40g vegetable oil, 50g ordinary flour, 3g salt and five-spice powder into the pastry ingredients;

Take out the dough and roll it into a rectangular shape (I was lazy and pressed it into a sheet with a dough press);

Spread a layer of pastry evenly;

Fold one-third of both sides relative to each other and press the edges;

Roll it out with a rolling pin and fold the upper and lower thirds relative to each other;

Roll it into a rectangle again;

As shown in the picture; fold it left and right like this and roll it into a rectangular shape, then fold it up and down and roll it into a rectangular shape. Fold it three or four times in total to release the air;

Finally, roll out the dough into a rectangular shape (I used a dough press throughout the process and the final dough was 6mm thick);

Brush the surface with a layer of water, sprinkle with sesame seeds, and cut into long strips;

Place into a baking pan, cover with plastic wrap, and ferment until no more than 2 times in size;

Place in the middle rack of a preheated 200-degree oven and turn the heat up and down for 16 minutes. In the last few minutes, adjust the heat up and down to 230 degrees and bake until brown;
