Overview

I am from Sichuan and married to a Northeasterner. Before I came to the north, I had never eaten fried shredded potatoes with celery. My mother-in-law told me that this was what she had eaten when she was a child, so I learned how to make it from my father-in-law. The most common way to eat it in my husband’s family is to roll Shandong pancakes with celery and potato shreds.

  1. Grate potatoes, soak in water to remove excess starch, drain and set aside

  3. Cut the green onions into sections, shred the ginger, and break the dried chilies into sections with your hands

  4. Heat the oil in the pan, first fry the dried chili peppers, add onions, ginger, and a small amount of thirteen spices (Northeastern people especially like it, if you don’t like it, you can leave it out)

  5. Add shredded potatoes, add some light soy sauce and stir-fry evenly

  7. Before serving, add appropriate amount of salt, chicken essence and minced garlic. Finally, add vinegar along the edge of the pot and stir-fry evenly
