Spicy celery and potato shreds
Overview
I am from Sichuan and married to a Northeasterner. Before I came to the north, I had never eaten fried shredded potatoes with celery. My mother-in-law told me that this was what she had eaten when she was a child, so I learned how to make it from my father-in-law. The most common way to eat it in my husband’s family is to roll Shandong pancakes with celery and potato shreds.

Grate potatoes, soak in water to remove excess starch, drain and set aside
