Crispy green onion pancake
Overview
This cake is crispy and very delicious! Shepherd's purse juice can be replaced with equal amounts of other vegetables and juices, or of course, with corresponding warm water.

Pick and wash the mustard greens, put them into a wall-breaking machine and beat them into juice. Add the eggs and mustard juice into the flour. Add the shepherd's purse juice little by little, stirring as you add, until it becomes flocculent, and knead into a smooth dough.

Let the dough rest for 10 minutes. Sprinkle an appropriate amount of dry flour on the board. Divide the dough into several pieces of whatever size you want. Roll the dough into discs.

Apply a layer of oil on the dough, sprinkle an appropriate amount of salt and chopped green onion, cut an opening with a knife, and roll the dough into a cone shape using the cut as a radius.
