Secret Braised Pork Ribs

I have always loved eating spareribs, but I never like the ones my mom makes. As a hardcore foodie, I decided to make some innovations myself^_^

  1. Soak the pork ribs in water for 1 hour and set aside

  2. Put the ribs in a pot with cold water and bring to a boil

  3. Heat a little oil in a pan, add the cooked pork ribs and stir-fry

  4. After it changes color slightly, add star anise, Sichuan peppercorns, dried chili peppers, scallions and ginger slices and stir-fry, pour in braised soy sauce for color, add light soy sauce and cooking wine to enhance the flavor

  5. Pour in boiling water, the amount is 1-1.5 times that of the ribs, add the remaining seasonings (tangerine peel, garlic, rock sugar, oyster sauce, salt) and boil over high heat for 5 minutes, then reduce to low heat and simmer

  6. After simmering for about an hour and a half, the soup has become less and the meat has become rotten. You can reduce the juice over high heat
