Overview
In the small coastal town where I live, the dish of fish stewed with pancakes has a long history. The classic method is to simmer a pot of fish in an iron pot in my hometown, and then stick pancakes on the edge of the pot. It seems very simple, but this pancake especially tests the skill of the cook. There are skills when and how to stick it, otherwise, it may be a mess. Nowadays, it is rare to eat such delicious food. Every time I go back, I find that the food in my hometown becomes more modern and more like a banquet in a hotel. So, I finally couldn't help myself, and made pancakes and boiled fish in my small home to comfort myself.

Remove the head and internal organs from the fish, wash it, and there are tips for removing the skin. Pour 70-degree water on the fish to easily remove the skin. If you like fishy fish, you can ignore this part.

Prepare onions, ginger, and garlic. I don’t have any ginger at home. It’s probably impossible to send these two lazy rabbits to buy it, so I omitted it.

Since I was using an electric baking pan to make pancakes, I decided to use a two-pronged approach. The method of making this pancake noodle is very particular. It is best to use corn porridge mixed with corn dregs, so that the pancake will be soft and refreshing. When eating cornmeal or dregs, it is best to add a little edible alkali to supplement niacin.

Roll the live pancake dough into small balls and press it into the electric pan. If your hands get wet, prepare a bowl of water next to it for dipping your hands.

Next, add a little water to the electric baking pan and cover it with a lid. Note that generally electric baking pans are heated on both sides. In order to obtain the best taste, you can cover the electric baking pan with another lid to prevent the cake from drying out.

Sauté the onions and garlic, add the fish, pour the soy sauce and vinegar mixture, be sure to cover the pot and simmer for half a minute, then add water and seasonings.

Cover the lid and bring to a boil over high heat, then turn down the heat to low. As the saying goes, Qiangudu Tofu and Wangudu Fish means that it is better to stew the fish for a longer time. When the soup is less, turn off the heat. At this time, the pancakes will be ready.
