Date cake (red dates)

Date cake (red dates)

Overview

I often go to jujube shops outside to buy red jujube cakes. I want to try them myself and see if they are healthier and safer than those sold outside. Attached is the recipe that I tried, and friends who are interested can refer to it.

Steps

  1. Boil the red dates for 20 minutes, take them out, wait for them to cool, peel and core them. Use a spoon to press into paste. Add light cream (milk can be used instead, thick milk is best) and mix well.

  2. Beat egg whites and sugar until they have upright peaks

  3. Crush the brown sugar with a juicer, sift it, and sift it into the cornmeal paste. (If you find it troublesome, you can put it in without sifting. Since there are impurities in the brown sugar, 35 grams may not be sifted in. Friends who like sweetness can put more brown sugar.) After mixing well, add melted butter (if there is no butter, you can also add the oil commonly used at home, and it does not have a strong flavor), mix well again, and add the egg yolk

  7. Scoop one-third of the egg whites, mix well with the cornstarch paste, stir up and down, do not stir in circles.

  8. Then pour the mixed cornstarch flour into the remaining egg whites, and stir evenly.

  9. For a 6-inch movable bottom mold, you can cut a piece of oil paper and lay it on the bottom for easy demoulding. Use the remaining butter at the bottom of the bowl to coat the perimeter of the bowl to prevent sticking.

  10. Pour in cake batter

  11. Shake the pelvic floor vigorously on the table several times to expel large air bubbles.

  12. Wrap the bottom with tin foil

  13. Put some water in the baking pan and put it in the oven at 170 degrees. (If you don’t have tin foil, you can put a bowl of water in the oven, or bake it directly.) This will prevent the cake from cracking due to lack of water.

  14. After baking for 40 minutes, you can check whether the cake is done by inserting a toothpick into the cake. If nothing sticks to the toothpick, it is done.

  15. Once the cake is out of the oven, you can turn it upside down and unmold it easily.

  16. It may be because the water bath method is used to bake it, and the inside is very soft. If you want a slightly drier taste, you don’t need to use the water bath method.

  17. Picture of the finished product, the red dates are rich in flavor and really fragrant~
