I chose a local chicken at the market and had it killed directly by the chef. Go home, clean and chop into pieces, blanch in hot water, remove and wash and set aside; slice the ginger, cut the green onion into small sections, and smash the garlic;

Heat oil in a pot, stir-fry the ginger slices first, then put the chicken into the pot and stir-fry together;

Add some cooking wine and red 99 spicy chicken seasoning, stir-fry evenly, then pour boiling water to cover the chicken;

Cover the pot and simmer for 30 minutes, then use a spatula to cut the meat to see if it is done;
