Braised Pork Ribs with Potatoes
Overview
I bought too many ribs last time. After processing, I put them in the refrigerator and took them out to make roasted pork ribs with potatoes. It is easy to make, nutritious and delicious.

After blanching, put the ribs in the refrigerator.

Put a little clear oil in the pot, add pork ribs, ginger slices, star anise cooking wine and stir-fry until fragrant. Add 1 teaspoon of sugar and add dark soy sauce. Add enough boiling water at a time, bring to a boil over high heat and then reduce to medium to low heat.

Peel the potatoes and cut them into small pieces, soak them in water to remove the starch on the surface.

When the ribs are cooked, add the potato pieces and stir-fry. Add some boiling water and continue to cook.

Cook until the potatoes are soft and tender, add some chicken essence and stir-fry, reduce the juice over high heat and serve on a plate.
