Northeastern Fried Noodles—Deceptively simple but with a few tricks

Fried noodles are the most common staple food for Northeastern people, and almost everyone has eaten it. It seems simple to make, but many people just can't make it at home. Most people choose to eat out. My friend who owns a snack bar can't make it well. In fact, fried noodles can also taste like outside at home, and it’s quite simple. Required materials: noodles (special for fried noodles), rapeseed, tomatoes, dried Sichuan pepper, sugar, thirteen spices, dark soy sauce, very fresh flavor, oyster sauce, salt.

Add noodles under boiling water and cook over medium-low heat until noodles are completely puffed up.

Cool quickly and set aside.

Shred the onions and ginger, and cut the tomatoes into small pieces and set aside.

Wash the rapeseed and tear it into small pieces.

Key steps: Heat the pan with cold oil, turn on the minimum heat, add dried Sichuan peppercorns and slowly stir-fry until the burnt aroma develops (it is best to use shredded dried Sichuan peppercorns here, I happened to have no food at home, so I had to use Sichuan peppercorn segments).

Add onion and ginger and stir-fry until fragrant.

Turn to high heat, add tomatoes and stir-fry for half a minute.

Add the rapeseed and stir-fry until raw.

Add noodles and stir-fry.

Add: a little dark soy sauce, an appropriate amount of very fresh flavor, an appropriate amount of thirteen spices, a little sugar, an appropriate amount of salt, a spoonful of oyster sauce and stir-fry evenly.

Done. You can add fried eggs or not, as you like.
