Wash the carrots, cut them into thin slices and then shred them. Wash the green onions and cut them into sections and set aside

Crack the eggs into a bowl and set aside

Heat an appropriate amount of oil in a pan. When it is 70% hot, pour in the eggs and fry until they form lumps. Add a little oil to the pan, then directly add shredded carrots and stir-fry. Add salt, chicken essence and thirteen spices and stir-fry evenly

Take out of the pot and serve on a plate. Chop the green onions and sprinkle them on top of the dishes to garnish and serve
