  1. Take the leaf part of the green onion, wash it and drain off the excess water, first cut it into sections and then shred it

  2. Add oil to the wok, add shredded green onions into the cold oil, keep on medium heat and slowly stir-fry shredded green onions

  3. Cook until the shredded green onions are shriveled, crispy, and slightly burnt in color. Take out some of the shredded green onions and set aside, leaving the rest at the bottom of the pot

  4. Pour in the light soy sauce and dark soy sauce and bring to a boil, then add the white sugar and stir continuously until the sugar is completely dissolved. The scallion oil is ready
