Tomato, Potato and Spare Ribs Soup
Overview
I originally wanted to have tomato and potato soup, but by accident I bought an extra pair of ribs when I was buying meat. God knows I still have ribs in the refrigerator that I haven’t eaten yet, so I might as well forget about the ribs.

Wash and cut the spareribs and splash in water.

Take out the ribs and put them in the soup pot.

Add water and a few slices of ginger, bring to a boil over high heat, then turn to minimum heat and simmer slowly.

During this time, you can process the potatoes, peel them and cut into large chunks.

Peel tomatoes and cut into cubes.

When the ribs are almost cooked enough, add tomatoes, an appropriate amount of salt, and continue to simmer over low heat. I felt that adding salt later was not enough to taste, so I added it in advance.

When the tomatoes are almost rotten, add the potatoes and continue cooking.

Cook until potatoes are cooked and add appropriate amount of chopped green onion. I grow green onions at home, so I add some on a whim. It’s up to you to add some or not.
