Shredded pepper and potatoes
Overview
This dish is very simple and requires a lot of skills. One is to test the knife skills, and the other is to test the control of the heat. These qualities are all necessary for a chef. I am a different kind and have never practiced knife skills. I just want to make a side dish for the fish-flavored shredded pork, so that I can complete my burrito feast! ^_^

Cut the potatoes into shreds, the knife skills are average and not very uniform^_^.

Rinse the shredded potatoes repeatedly in cold water and drain. You can also add a little rice vinegar when washing to make the shredded potatoes crispier.

Put oil in the pot, add star anise and stir-fry until fragrant.

Add garlic and dried chili segments and sauté until fragrant.

When the peppers are fragrant, add the shredded potatoes and quickly stir-fry.

Stir-fry for about 30 seconds, add salt, spicy fresh and chopped green onion, stir-fry and serve!
