Hot and sour potato shreds
Overview
The most common home-cooked stir-fry, I never get tired of eating it since I was a child ~ spicy, sour and crispy, delicious and goes well with rice😋

Peel the potatoes, cut into even thin strips, put them directly into the water after cutting

Change the water twice more until all the starch on the surface is rinsed, drain and set aside

Shred the carrots and onions, smash the garlic

A little too much oil in the hot pan

Add onions, garlic and dried chilies

Saute over high heat until the onions are golden brown

Pour in shredded carrots and add 1 spoonful of pepper powder

Stir fry over high heat for half a minute

Pour in shredded potatoes

Immediately add 1 and a half tablespoons of balsamic vinegar

Stir-fry over high heat until the shredded potatoes are shredded, then add 2 tablespoons of light soy sauce and 2 tablespoons of cooking wine

Stir-fry over high heat until evenly flavored. Add appropriate amount of salt and chicken powder to taste, stir well and turn off the heat
