Toon Sprouts Scrambled Eggs
Overview
Growing up in a small town in Northeast China, I always ate pickled toon sprouts when I was a child. The salty and strange aroma made me inexplicably happy when I tasted it. I ate fresh toon sprouts for the first time during my college internship. It wasn’t until I returned to the small town after graduation that fresh toon sprouts were finally available in the supermarket. Every year when they came on the market, I would rush to try them as soon as possible. Many of the flavors in my memory have changed. Fortunately, some of them have always been there.

After the water boils, add half a spoonful of salt, a few drops of oil, and blanch the toona buds in boiling water. After they all turn green, take them out and drain them into cold water.

Pour the blanched toon buds in cold water, cut off the old roots, and then chop into fine pieces. (You can also cut it into inches, but the frying method is different)

Put the chopped toon sprouts into the eggs, add an appropriate amount of salt, and stir evenly.

Pour oil into the pot. When the oil temperature is 70% hot, add the eggs and stir-fry. (When it is difficult to control the oil temperature, you can use chopsticks to stick the egg liquid and drip it into the pot. When the egg liquid enters the oil pan, turn it over to release all the egg liquid.)
