Pour the sweet potato flour into a stainless steel basin, add an appropriate amount of boiling water, and knead into a dough

Use a glass bottle or other cylindrical object (hard enough) to roll the dough into thin slices and cut into strips.

Put the bean sprouts in the pot and stir-fry until cooked, then scoop them out. Pour peanut oil into the wok, and when the oil temperature reaches about 60 degrees, pour in the sweet potato vermicelli, stir-fry constantly, and use chopsticks to loosen the vermicelli to avoid clumping. Sprinkle appropriate amount of boiling water in several times, add sugar, salt, chopped green onion, bean sprouts and soy sauce, and serve on a plate.
