Cut the pig's trotters into pieces, blanch them, and remove the hair. They were already cut when I bought them, and there was still a little bit of wool on them. I pulled them out with my hands. The pig skin swelled after being soaked in water and was easy to pull out. Use fire to burn the areas that were difficult to pull out.

Add a small amount of oil to the pot, add rock sugar, stir-fry until the sugar color turns out, then add the pork hands to color.

Add ginger slices, star anise, dried chili peppers, garlic, cooking wine, light soy sauce, and dark soy sauce in turn and stir-fry, then add water to cover the pork knuckles.

Bring to a boil over high heat, add small potatoes, bring to a boil again and then turn to low heat.

Cook for about two hours. When the pork knuckles are cooked, add salt to taste and reduce the juice over high heat
