Overview
Traditionally roasting eggplants consumes a lot of oil and does not meet modern healthy eating standards. In fact, it is very simple to save oil. You only need to fry the eggplants in advance on an electric pan.

Slice the round eggplant into diamond-shaped pieces and mince the garlic;

Brush a thin layer of oil on both sides of the pan, add the eggplant slices, and heat for 4 minutes;
