Wash and slice the king oyster mushrooms and arrange on a plate.

Steam in a pot. After the water boils, turn to medium heat and steam for about eight minutes. Take it out and let it sit until it is no longer hot to your hands. Pour off the excess water.

Cut green onions into thin strips and soak in water. If you want more green onion rings, soak them in warm water.

Cut Thai pepper into rings and mince garlic.

Take a small bowl, pour an appropriate amount of light soy sauce, add 1 teaspoon of sugar and a little chicken essence, and add a small amount of water to mix.

Place the minced garlic in the middle of the king oyster mushroom slices, top with shredded green onions, and finally put the Thai pepper rings on top. (I forgot to take pictures at this step)

Heat a little hot oil (less than usual for stir-frying). When it smokes slightly, pour the hot oil over the Thai pepper and green onion.

Pour the soy sauce water into the pan while it is hot. The residual heat in the pot will heat up the soy sauce. No need to light a fire for this step. Then pour it over the dishes.
