Jasper Cordyceps Mushroom
Overview
Jasper Cordyceps Mushrooms gave this dish a nice name, because if it were written as Cordyceps Mushrooms, Stir-fried Potatoes and Celery, it would be verbose. An idea occurred to me. Since celery is green and potatoes are white, let’s call it Jasper. Although stir-fried celery with shredded potatoes is a very common dish, today the addition of Cordyceps mushrooms adds new elements and therefore new nutrients. Cordyceps mushrooms have strong muscles and bones, regulate nerves, restore the body, and have anti-cancer properties.

Shredded tenderloin

Cut potatoes into thin strips, soak in water with some white vinegar for 10 minutes (crisp)

Celery cut into sections

After soaking the shredded potatoes, remove and drain the water. Place the washed cordyceps mushrooms on a plate

Heat the wok, heat the oil, add onion and garlic and stir-fry until fragrant, add shredded lean pork, add light soy sauce to adjust color and stir-fry

Add cordyceps mushrooms and stir-fry for a while

Add shredded potatoes and stir-fry until translucent

Add salt, stir-fry the celery until the celery turns green, add MSG and stir-fry twice before removing from the pan.
