Prepare ingredients. For flour, choose Fuqiang flour. It is a medium-gluten flour and is most suitable for pancakes. Do not choose high-gluten flour because high-gluten flour will make pancakes hard

First blanch 2/3 of the flour into boiling water to make dough, then mix the remaining 1/3 flour with cold water to make dough

Use chopsticks to mix the two kinds of noodles evenly (mix well so that the dough won’t be hot to your hands)

Knead the dough and let it rest for more than half an hour (if it is sticky, it will be easier to knead it if it is sticky)

Sprinkle dry flour on the dough board, place the dough on top without kneading, directly dip it in flour and knead into thick strips, then cut into large dough pieces of equal size

Take the dough mix and roll it into a round piece, brush it with a layer of vegetable oil, and sprinkle in a little salt to taste
