Overview
I bought red onions a few days ago and chopped a lot today. The chopped red onions are used to boil onion oil and can be sealed and used to mix noodles, cold dishes, and dip into boiled seafood. They are all very good, especially when making braised pork rice.

Peel the skin off the shallots and cut off the head and tail.

Chop the green onions. I usually take the simplest method, which is to cut the onion a few times and then rinse the knife with water. The effect is okay.

All chopped shallots.

Heat the wok, add vegetable oil, and when it is about 70% hot, add all the green onions.

Simmer over low heat until the onions turn brown, about half an hour.

Turn off the heat and let it cool down, seal it in a container, and eat as you go.

Today I will mainly talk about the dipping sauce for boiled seafood that my family recently eats. Generally, seafood soy sauce, mature vinegar, and oyster sauce are added in a ratio of 1:1:0.5, then chili oil and scallion oil are added, more minced garlic is added, and a little white sugar is added. Sugar and stir evenly (chili oil is also homemade, you can see the recipe for homemade chili oil). This simple dipping sauce is great with all kinds of boiled seafood, such as boiled shrimp, boiled sea hare, boiled squid, boiled conch, etc.
