Prepare 3 eggs. Crack the two into a bowl and stir into egg liquid (forgot to take a photo)

Put oil in a hot pot, shake the pot to evenly coat the pot with oil, and pour out the remaining oil.

Pour the egg liquid into the pot and pour it in as evenly as possible.

Shake the pan so that the egg liquid evenly covers the pan, and try to make the egg skin even. (It’s best to use a flat-bottomed non-stick pan)

Cut the egg skin into diamond-shaped slices.

Crack the remaining egg into the bowl, stir, then add the starch and stir to form an egg paste. The egg paste should be able to fall in a straight line when scooped up, and should not be too thick.

Put the cut egg skin into the egg batter and spread it evenly.

Put about 100 grams of oil in the pot and heat it

The battered egg skin is fried in batches.

Drain the fried eggs and set aside.

Pour out the remaining oil in the pot, leaving a little base oil, and add sugar.

Heat over medium heat, stir while heating, stir-fry until the sugar is completely melted and turns light brown, and when bubbles appear, scoop up the sugar juice with a spatula and pour it down to form a straight line. Add the fried eggs, evenly dip them in the sugar liquid, and take it out of the pan immediately. The time requirement was very strict, so there was no time to take pictures. This step is the key to drawing the silk. If the sugar is not boiled enough and the silk cannot be pulled out, it will become fried with sugar, and it will become bitter after time.

Serve hot on a plate. Not much sugar is used, so there is not much shredding, but it won't stick together easily and it won't be overly sweet.
