Wire drawing can be divided into water drawing, oil drawing and water-oil drawing. Oil pulling is the hardest to control. But the silk pulled out by oil is crystal clear and the drawing is very long. Peel the potatoes, wash and cut them into cubes, and prepare the white sugar.

When the oil pan is 50% hot, add potato cubes and fry over low heat until they float.

Remove the fried potatoes when their skin is golden brown and set aside.

Leave a little base oil in the pot, pour in the sugar and stir continuously in circles.

Until the white sugar is completely dissolved, continue to simmer over low heat until it turns brown.

Pour in the fried potato pieces and stir-fry quickly so that the sugar juice evenly coats the potato pieces.

There aren't that many strands in the potato pieces just out of the pot. After they cool down for a while, you can pull out a lot of strands. Use the remaining sugar juice in the pot to draw long ribbons for decoration.
