  1. First cut the peppers into sections, soak the potato slices in water to remove the starch, mince the onions and garlic and set aside.

  2. Heat the pan with cold oil and fry both sides of the pepper until the skin is removed. Pour into a bowl of juice (half a spoonful of light soy sauce + half a spoonful of vinegar + half a spoonful of sugar + half a spoonful of oyster sauce and mix thoroughly). Simmer briefly and serve.

  3. In another pan, sauté the onions and minced garlic.

  4. Add the potato slices and stir-fry. Add appropriate amount of salt and stir-fry the light soy sauce until cooked. Add the oyster sauce and the previously stewed pepper and stir-fry evenly before serving.
