  6. Secondary fermentation mainly depends on the room temperature. If the room temperature is around 24 degrees, there is no need to turn on the fermentation function of the oven. Just put a bowl of hot water and put the toast box in for fermentation. If the room temperature is lower than 18 degrees, you need to use the fermentation function of the oven. At this time, you can put a bowl of cold or warm water to keep the temperature. Of course, too high a room temperature is not suitable for room temperature fermentation, because too high a room temperature will make the dough easy to sour. Ferment until the toast box is 80% full, about 3 cm away from the mouth of the toast box.
