  1. Prepare old tofu. (Wash your hands clean and you can crush the tofu directly with your hands)

  2. Chop the lean meat into fine pieces. You can chop it yourself or have it minced by others at the market. (Try to break it as early as possible, otherwise it will separate during cooking)

Put the minced meat, tofu and chives into a bowl, add salt (depending on personal taste, I suggest adding as little as possible, if it is not flavorful enough, you can eat it with a sauce plate), add cornstarch, you can add more cornstarch (it will not be easy to separate when cooking), and then use your hands to mix well.

  4. Grasp the minced meat evenly and shape it into a round shape. I can't pinch them well, they are different sizes, so I put them on a plate and set them aside.

  5. You can put the meatballs in when making hot pot or making soup. I put them in when making chicken soup. It depends on your personal preference. (Boiled with stock, it will be more nutritious.)
