  1. Peel and shred the potatoes, soak them in water and add 2 tablespoons of white vinegar.

  2. Cut the green onions into sections, dice the dried chili peppers, and wash the peppercorns and set aside.

  3. Cut carrots into shreds and set aside.

  4. Wash the soaked potato shreds several times with water, drain and set aside.

  5. Pour peanut oil into a hot pan, add Sichuan peppercorns and dried chili peppers and stir until fragrant, then remove the Sichuan peppercorns and dried chili peppers and discard them.

  6. Add half a chili pepper and shredded potatoes and stir-fry. (You can add more chili pepper if you like it spicy).

  7. When the shredded potatoes are half cooked, add shredded carrots and stir-fry, add 1 tablespoon of white vinegar.

  8. Finally, add 1 tablespoon of white vinegar, chopped green onion, salt, and sugar to taste.
