A family-style afternoon cake——Madeline
Overview
First, I would like to recommend a famous book to you - "In Search of Lost Time" (written by the famous French writer Marcel Proust), which has a tempting description of pastries like Madeleine. This is a small afternoon cake in Western pastries. A common type of pastry originating from France, it is loved by people all over the world and has a unique flavor. Belongs to shell cakes (madeleines), also known as (Madeleinecommercy). Legend has it that it is a snack full of family flavor in the city of Commercy in France. Because its shape is like a shell, it reminds you of a plump and plump woman when you eat it, so it is also called a sexy biscuit.

-
Crack the eggs into the eggbeater
-
And pour in the caster sugar and lemon zest mixture.
-
Add a little vanilla essence and mix well

Pour into the mixture (preferably while the butter is still warm) and stir again until smooth.
-
Stir until the mixture becomes smooth, then place in the refrigerator for 1 hour.
-
Remove batter from refrigerator. By this time the batter has solidified. Leave it at room temperature for a while. When the batter returns to a flowable state, put the batter into a piping bag and squeeze it into the madeleine mold. About 90% full. (If you don’t use a piping bag, you can also use a spoon to scoop the batter into the mold)
-
Apply a layer of butter in the madeleine mold to facilitate release
-
Squeeze the batter into the mold
-
Place the mold into the preheated oven, heat up and down to 190 degrees, and bake for 13-15 minutes. In the picture, it is 9 minutes into baking. At this time, a high bulge has appeared on the back of the madeleine.
-
Unmold the baked madeleines while they are hot and place them on a cooling rack to cool
