Yam Egg Pancake
Overview
While working on weekdays, my grandpa is responsible for the children's meals. He basically eats noodles in the morning. On weekends, he always wants to make something different for his daughter to eat. The little girl prefers to eat the pancakes I fry. I have fried almost all kinds of ingredients for her to eat. Today I specially pan-fried this pancake with yam, eggs, and flour. Yams are very rich in nutritional value and can promote digestion and improve the digestion and absorption function of the spleen and stomach. It tastes great when fried into pancakes, golden in color and glutinous in texture!

Wash the yams, peel them, cut them into pieces and steam them in a pot. (It is best to wear disposable gloves when peeling yam, as the skin will be itchy on your hands)

Use a food processor to mash the steamed yam. If you don’t have a food processor, you can mash it directly with a spoon. (Be sure to mash it as much as possible, and don’t leave any lumps, otherwise it will affect the taste)

Add a beaten egg to the bowl of mashed yam (the egg is beaten in advance, it is not easy to stir if it is beaten directly into the bowl), add an appropriate amount of flour, a small amount of cornstarch, and a small amount of salt. Mix well.

Heat the oil in the pan and add the stirred yam paste. Fry until one side is golden brown, then flip over. Just cut it into small pieces after taking it out of the pan.
