Spring is here, and these little snow shrimps are a seasonal delicacy. I grew up eating. We call them little white shrimps. The way to eat it is simple. It is usually stir-fried with eggs, leeks or green onions. It is also made into shrimp dumplings with flour, leeks or green onions. Every year, the white shrimps that come down in spring are out of season and eaten next year. Moreover, TV stations often introduce the preparation methods of seasonal ingredients. I learned this dish from TV. What I ate was the original shrimp, and it had a crispy texture.
