Overview
Sponge cake is a cake that you must learn to make if you are a baker. It tastes soft and delicate like a sponge. Novices sometimes suffer from the lack of molds. Prepare a basin filled with hot water, the temperature is about 80 degrees, sit the basin containing the egg liquid on the hot water, and the bottom of the basin is next to the water skin

Across hot water, use a whisk to beat the egg liquid at high speed. During this period, test the temperature of the egg liquid with your hands. If it is about the same temperature as your hand, remove the hot water basin and continue to beat the egg liquid until it is thick. Lift the egg beater and the dripping egg liquid pattern will not disappear immediately

Take out 2 spatulas and put the egg batter into the bowl of milk and vegetable oil, mix well;

The oven adopts the upper and lower tube heating method. The upper tube is preheated at 180 degrees and the lower tube is 185 degrees. When the preheating is in place, the prompt sounds. Place the baking sheet in the middle layer of the oven and set the time for 15 minutes

In the last 5 minutes, I saw that the surface of the cake was not colored, so I readjusted the temperature of the upper and lower tubes. Adjust the upper tube to 190 degrees and the lower tube to 180 degrees. Continue baking for 5 minutes. This is the advantage of adjusting the temperature at any time
