  1. Wash the pork skin, cook and let cool. Use a flat blade to remove excess oil. Cut into strips.

  2. For mutton soup, prepare 4 times the amount of pork skin. Mix the two, bring to a boil over high heat, then simmer over low heat for about forty minutes until the amount of soup becomes reduced. The ratio of skin to soup is about one to three. Add salt and a little sugar. Add a little dark soy sauce to enhance the color, or you can leave it alone.

  3. Turn off the heat, cool in a container, put in the refrigerator, and cut as you go. I added a small dipping saucer with garlic slices, pickled peppers, vinegar, and light soy sauce. Personally, I think it’s better to eat it directly. Drain the dish and discard it.
