Chunya scrambled eggs
Overview
Spring is here, and it’s the time to eat toon buds. I also went to the market and bought a handful of toon buds. This was the first time I bought such tender and fresh toon buds in the north. In the past few years, the toon buds on the market were very long, old, and stale. Today I bought such good toon buds. Although the price is very expensive, 30 yuan per catty, or 10 yuan for a small handful, I am still very happy.

Wash the toon buds and remove the older roots.

Cut the toon sprouts into small pieces.

Prepare two larger eggs.

Use chopsticks to spread the eggs in one direction.

Add the chopped toon sprouts, a spoonful of salt and half a spoonful of peppercorns and stir evenly in one direction.

Put a tablespoon of lard in the pot. When the oil is hot, pour in the prepared Chunya eggs. Adjust the heat to medium and fry the eggs on one side until golden brown.

Then flip over and fry until the other side is golden brown. After both sides are fried, use a spatula to poke the eggs into small pieces and stir-fry a few times.

Finally put it on the plate and take it out of the pot.
